Homemade Fettuccine Alfredo Recipe
Ingredients: 4 ounces uncooked fettuccine, 3 tablespoons butter, 1 cup heavy whipping cream, 1/4 cup plus 2 tablespoons
grated Parmesan cheese, 1/4 cup grated Romano cheese, 1 large egg yolk, lightly beaten, 1/8 teaspoon salt, Dash each pepper and
ground nutmeg, Minced fresh parsley, optional. Prepare the fettuccine as directed on the package. Meanwhile, melt butter in a
saucepan over medium-low heat. Add the egg yolk, 1/4 cup Parmesan cheese, Romano cheese, milk, nutmeg, and salt and
pepper. Do not boil; instead, cook and stir over medium-low heat until a thermometer reads 160°. After draining, mix
the fettuccine with the remaining 2 tablespoons of Parmesan cheese and the Alfredo sauce. Add a little parsley if desired.
